Hi My proposal is to give you a completely food-safe pump system with highly accurate dose metering to allow you to finely tune in the required flavors and essences. It would be made in a modular manner so that you can scale it up as you go and the system would automatically adjust for the newer additions with minimal operator intervention. I am still unclear about a few other things so perhaps we can discuss it over using the chat box but in general i would develop a fully working prototype and mail it to you for your evaluation. Pi is too much for this project, actually Pi is for most complex projects, those based on some kind of image/video/audio processing and stuff for this like yours, ESP32 will do, esp32 is fast, 180 MHz, with 2 physical cores on it ESP32 has WiFi facility on board to connect to your designed app on your mobile phone or even PC esp32 can as well connect to near by router to log all the data onto your web server, and you will be able to view it in real time over internet actually you need peristaltic pump to push ingredients along the pipe , some kind of solenoid valve to allow liquid-x to flow or not and yes user will confront an interface where they will be able to select the gin type they want by clicking on it, this can be done over app or touch screen like Nextion display hit me on chat for more please
