Nginx & php-fpm fine tune config

I need an expert who was worked on similar projects before and has experience with nginx and php-fpm. We have a dedicated server (linux - centos) that runs a single website, i need nginx and php-fpm configured to server specs and website needs. In the past we also used eAccelerator as php accelerator, but since it is not longer updated and maintained we wish to switch to something better and more stable (xcache or apc or something) that would work for us.
