This sounds like it is a relatively simple problem to solve. I would suggest, implementing a 3-2-1 backup strategy. What this entails is having the server generate a backup every so often, say every 24 hours, the server will then maintain 3 days worth of backups, that way if the problem goes unnoticed for a couple of days we can still roll back to a previous iteration of the database. These numbers can be adjusted, It may also be prudent to purchase a secondary server for the backups to be stored on, to further decrease the chances of unrecoverable data loss.
