PDF text extraction to CSV file

We get hundreds of custom orders from Amazon every week, it takes ages to find and create the customisations from the amazon packing slips, we’d like someone to create some software/adapt some existing software which can extract the information we want from a pdf into a csv file. This needs to be able to work on Mac and windows. We will need to extract every order reference, qty, SKU, and customisations for each item in the pdf (these can be up to 120 pages). I have read that some things like this exist already in places like GitHub, so I’m hopeful a competent developer can extract and adapt code from existing sources (if there is a cost for code please let me know and we can see if this is worth it) hence the low budget as I should think the right freelancer could do this in a few hours. Before you bid please feel free to ask questions, I will supply an example pdf file and how I want it to look as a csv before you start so that you ensure the output is precisely how I want it, I’m currently using my phone so unable to do this right now, will add in a couple hours. **Update example files now added** In terms of how this works, I’d ideally like to be able to press a button or file/export within acrobat which triggers the code and extracts all of the info to a folder as a csv file, if it needs to be more complicated it can be but it needs to be simple enough for my staff to be able to use. I’m going use this data to automate the making of my illustrator files so it needs to work perfectly.
