For simple solution its possible use MQTT protocol for communicating to esp32 to local (offline) server. I suggest for you, case choice me: - build firmware for esp32 for connect to network. - configure raspbarry for receiving and process the data. But i need know your choice for network (WiFi...?).... this affect the time and price!
