Since you mentioned no mailboxes are to be migrated, this should be straightforward on the Office 365 migration. I have had experience designing and deploying office 365 environments for several companies in Australia, and am a Microsoft certified office 365 engineer. I can configure mailflow, anti-spam, sharepoint, dirsync, ADFS, etc to give you a fully realised office 365 solution with single-sign-on (ADFS is a requirement in this instance) and I can work during Ireland's hours or out of office hours as required.
